Roasted Pears for Dessert

The other night we tried Bon Appetit's recipe for Roasted Pears with Blackberries, Ricotta, and Lavender Sugar. It was delicious! We didn't serve it with ricotta - I got some vanilla bean ice cream instead.


The only problem was the directions say to bake the pears for FOREVER. All of ours burned. So if you try it, I recommend watching them closely. Because the pears were burned, we didn't put the berries in the oven - we cooked them on the stove top and added some blueberry nectar.

The best thing about this recipe is that there was so much lavender sugar left over. I saved it and I'm going to sprinkle it on the blueberry scones I'm making this afternoon.

It has been so hot here and I'm not used to how muggy it is. That and when I get in the car I refuse to drive with the windows down because of an incident with a wasp/hornet I had last week. Oh, and I don't have air conditioning.

Because of the heat I need to no-cook recipes for dinner. Last night I whipped up a little salad of strawberries, spinach, fresh mozzarella, pecans, and basil. I threw some balsamic, olive oil, and pepper on the top. It was delicious and refreshing.

Today isn't as painfully warm so I'm going to attempt some blueberry scones. I have leftover buttermilk from the scones last week and I LOVE blueberry scones.
