Foods for Summer: Lemon Bars

Summer is here and the heat and humidity are starting to get to me. I'm comfortable with heat - we didn't have air conditioning in Southern California and some days it would get hot but not unbearable. All you needed was a fan. Here, the humidity means the second I step outside I'm instantly sweaty. I can't breathe properly with all the liquid in the air. And I'm REALLY starting to think I need to get the air conditioning in my car fixed.

The weather makes any warm or heavy food unappetizing. I've been trying to make foods that are light and cool and balance the weather perfectly.

That's what makes lemon bars perfect. We made them the other night when we had friends over for dinner, and it was the perfect end to a meal.



This recipe is from Bon Appetit. The only change I made to it was instead of fresh lemongrass I used pre-pureed stuff from the store because they were all out. I've made them before with regular lemongrass and the substitution didn't change the taste.

I'll probably be posting a LOT of these kind of recipes over the next few months.
